High quality commercial Liquid Animal based Rennet,
Use 4 drops rennet to 5 litres of milk.

Directions for traditional and vegetarian rennet.
Using rennet is never a precise art. Factors such as type and age of milk, recipe being used and temperature in the setting room can affect the set.
As a guide use 2 drops per 1 litre for hard cheese and 1 drop per litre for soft cheese. Both of these should be pre-diluted in cold pre-boiled water. Stir well into milk.
Store rennet in a cool dark place (ideally the salad box in your refrigerator, or similar.)
